We thought we’d seen it all, but then the masterminds in the Quest test kitchen dropped yet another use for Quest Chili Lime Tortilla Chips. This time, it’s a bright and flavorful salmon recipe that gets the Questify treatment.

Yields: 3 servings |  Serving Size: 1 (6oz) piece of salmon

Ingredients

CHILI LIME CRUSTED SALMON

  • 1 bag Quest Chili Lime Tortilla Chips
  • 2 tbsp minced parsley
  • 1 tsp lime juice
  • 1 tsp lime zest
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 3 (6oz) salmon fillets (Atlantic)
  • 3 lime slices for topping

Method

  1. Place the chips into a food processor.
  2. Blend until fine crumbles form.
  3. Add the chip crumbs, parsley, lime juice and zest and salt and pepper to a bowl and stir to combine.
  4. Preheat oven to 400 F and place the filets on a baking sheet.
  5. Brush the filets with oil and top with mixture.
  6. Finish with lime wheels and bake for 15-17 minutes and cooked through.
  7. Let rest for 5 minutes and enjoy.
