Method
- Preheat the oven to 425 F and prepare a large baking sheet with the oil and place it into the oven.
- Wash the potatoes well and use a box grater to shred the potatoes and onion.
- Transfer the shredded potatoes and onion to a clean dish towel and wring out all the water.
- Let it sit for 5 minutes and then wring it out again until all the liquid is gone.
- Add the drained potatoes and onion to a mixing bowl along with the egg, crushed chips and saltand pepper. Use your hands to combine.
- Remove the baking sheet from the oven and use an ice cream scoop to make 12 mounds.
- Press the mounds flat using a spatula.
- Bake for 13-15 minutes, flip and bake for an additional 5 minutes.
- Serve with sour cream and chopped green onion if desired.
