Watermelon Feta Salad
I make this refreshing watermelon feta salad all summer long! I had a few friends over for a BBQ for my friend’s birthday and I served my Grilled Lobster Tails, grilled steaks, and this simple Watermelon Feta Salad with arugula and mint, which was such a hit! Watermelon is the best addition to any summer salad since it’s so light and refreshing. - Watermelon, cut in balls with a melon baller or cut into cubes, this sweet and juicy fruit is the base of the salad.
- Baby Arugula: It has a peppery taste that goes well with watermelon.
- Fresh mint leaves: Add some freshness and flavor
- Feta cheese: Crumbled in large chunks, adds creaminess to the salad.
How To Make Watermelon Feta Salad
- Start by using a melon baller, and prepare the watermelon into large balls. If you don’t have one simply cut into into 1/2 inch chunks. Set aside in a bowl until ready to serve.
- About 30 minutes before you’re ready to serve, drain the liquid from the bowl (I poured it into a cup and drank it!).
- Scatter half of the watermelon into a large, shallow serving bowl and scatter half of the arugula and feta on top, repeat with the remaining watermelon, arugula and feta then top everything with fresh mint.
