Ingredients
HOT & SPICY CHICKEN PARMESAN
- 3 chicken breasts, pounded (15oz)
- 2 tbsp coconut flour
- 2 eggs, whisked
- 3 bags Quest Hot and Spicy Chips, finely crushed
- ⅓ cup finely shredded parmesan cheese
- 6 tbsp spicy marinara sauce
- ½ cup shredded mozzarella cheese
- Fresh basil for topping
- Crushed red pepper for topping
Method
- Preheat the oven to 425 F and prepare a baking sheet with parchment paper.
- Pat dry the chicken breast using a paper towel. Place the coconut flour on a plate or shallow bowl, the eggs into a shallow bowl and the chips and parmesan into a shallow bow.
- Coat each chicken breast in coconut flour and then cover with the whisked eggs.
- Finely, coat with the crushed chip and parmesan mixture until they are completely covered on all sides and place them on the baking sheet.
- Bake for 20 minutes, remove from the oven and spoon the marinara sauce over the chicken breast and top with mozzarella cheese.
- Return to the oven for 5 minutes or until cooked through.
