Ingredients

HOT & SPICY TACO SALAD

For the beef:

  • 1 tbsp olive oil
  • 1 lbs lean beef, ground
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp pepper

For the salad:

  • ½ cup water
  • 3 romaine hearts, chopped
  • 8 cherry tomatoes, quartered
  • 1 jalapeno, sliced
  • 1 avocado, cubed
  • ¼ red onion, small
  • 2 bags Quest Hot & Spicy Protein Chips

Method

  1. Heat a large skillet with medium heat.
  2. Once hot, add the olive oil, beef and begin to cook while breaking the beef into small pieces.
  3. Once almost cooked through, drain the grease and then add the seasonings and water.
  4. Simmer until the water has thickened, about 3 minutes.
  5. Assemble your salad in a large bowl or in individual bowls by adding all the salad ingredients and topping with beef and Quest chips.
  6. Serve with dressing if desired.
