Ingredients
CHOCOLATE PEANUT BUTTER BANANA PIE
Crust:
- 1 ½ cups almond flour
- ¼ cup unsweetened cocoa powder
- 2 tsp zero calorie sweetener
- Pinch salt
- 3 ½ tbsp butter, melted
Chocolate Layer:
Filling:
Topping optional:
- 1 tbsp peanuts
- 1 tsp chocolate shavings
Method
- Preheat the oven to 350 F and prepare a pie dish with non-stick spray.
- Place the dry crust ingredients into a bowl and combine. Add in the melted butter and stir until the mixture resembles wet sand.
- Press the mixture into the bottom and up the sides of the pie dish and bake for 5-7 minutes. Let cool.
- Prepare the chocolate layer by placing the heavy cream and chopped Quest Bar into a small potover medium heat.
- Bring to a simmer, remove from heat and stir until the bar melts. There will be a few small chunks and that’s okay. Add in the chocolate and let sit for 5 minutes before stirring smooth. Spread the chocolate mixture in an even layer over the crust and top with banana slices.
- For the filling, whip the heavy cream until stiff peaks form and then transfer to a large mixingbowl.
- In the same bowl you whipped the heavy cream in, stir together the cream cheese and peanut butter until combined. It will be thick.
- Fold the peanut butter and cream cheese mixture into the whipped cream until combined. Fold in the protein powder. Spread the filling in an even layer over the bananas, add toppings and chill the pie until ready to eat. Cut into 16 slices and serve.
