Ingredients
QUESTIFIED TORTILLA SOUP
- 2 tbsp olive oil
- 1 yellow onion, chopped
- 1 large zucchini or two small, chopped
- 4 cloves garlic, minced
- Juice from 2 limes
- 2 tsp garlic powder
- 2 tsp oregano
- 2 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- ½ tsp pepper
- 1 15oz can fire roasted tomatoes
- 1 15oz can crushed tomatoes
- 32 oz chicken broth
- 1 cup water
- 3 cups rotisserie chicken, shredded
- 4 Bags Quest Tortilla Chips for topping
- Cilantro for topping, chopped
- 2 avocados for topping, sliced
- peppers if desired for topping
Method
- In a large heavy bottom pot, turn on medium heat. Once hot, add the olive oil and onion and zucchini and cook until translucent.
- Add in the garlic and spices and cook for 2 minutes and browned.
- Add in the tomatoes, chicken broth, water, lime juice followed by the chicken. Bring to a boil and then reduce to a simmer and then let cook for 20 minutes.
- Ladle the soup into a serving bowl and top with Quest Chips, fresh cilantro and avocado slices.
- Top with hot peppers if desired.
