Ingredients
MINI PEANUT BUTTER CUP POPCORN BALLS
- ½ cup peanut butter, natural
- ⅓ cup sugar free honey syrup
- 2 tbsp butter
- 8 cups popcorn, popped
- 8 Quest Mini Peanut Butter Cups
- ¼ cup sugar free chocolate chips
- 1 tsp coconut oil
Method
- Place the peanut butter, honey and butter into a large pot over medium heat. Stir until melted and smooth.
- Turn off heat and add in the popcorn. Gently mix the popcorn from the bottom up to evenly distribute the mixture.
- Once all the popcorn is coated, add in the chopped mini peanut butter cups and use ¼ measuring cup or ice cream scooper to make 16 evenly sized balls.
- Use your hands to pack the popcorn and form into balls.
- Melt the chocolate and coconut oil together in a microwave safe dish until smooth and drizzle over the popcorn balls.
- Chill for 20 minutes before serving.
