We were skeptical when they presented us with a Questified Chocolate Orange Tart to try. Over the years we’ve gobbled up the snacks, pounded the deserts, even housed the occasional hors d’oeuvre. But a tart? “A tart, you say?” was our reaction. Highly suspicious, we assure you. But then we found out that a Quest Double Chocolate Protein Bar is featured in this out-of-left-field offering. We tried it and we loved it. Now we’re tart people.

Ingredients

CHOCOLATE ORANGE TART

CRUST

  • 2 cups almond flour
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp zero calorie sweetener
  • Pinch sea salt
  • 6 tbsp butter, cold

Filling

Method

  1. In a bowl, sift together the almond flour and cocoa powder.
  2. Add in the sweetener and salt. Use a cheese grater to grate the cold butter into the dry mixture.
  3. Use your hands to mix until small crumbles form.
  4. Place the bowl into the refrigerator for 20 minutes. Remove the bowl and place the crumbles into a food processor and pulse until fine crumbles form.
  5. Press the crumbles into the bottom and up the sides of a 9-inch tart pan and bake for 10-15 minutes at 350 F.
  6. Make the filling by placing the heavy cream (reserving 2 tablespoons), butter and zest into a heavy bottom pot over medium heat. Bring the mixture to a boil.
  7. Meanwhile, chop the chocolate bars into small pieces and place them in a heat proof bowl. Pour the boiling cream mixture over the chocolate and let it sit for 5 minutes.
  8. Meanwhile, cut the Quest bar into small pieces and place them into a microwave safe bowl with the reserved 2 tablespoons of heavy cream. Melt the bar in 20 second increments, stirring between each until smooth and then add to the chocolate mixture whisking until smooth and combined.
  9. Pour the mixture into the tart and let sit at room temperature for 20 minutes before placing into the refrigerator to chill until set, about 1 hour. Top with orange slices, cut into 18 slices and serve.
