We were so busy figuring out how to Questify deep dish skillet cookies that we never stopped to ask if we should. Turns out the answer was yes, yes we should. And it seems the only way to improve on Quest mini Peanut Butter Cups was to incorporate them into this extremely delicious recipe.

Method

  1. Preheat the oven to 350 F and spray a 9-10 inch cast iron skillet with non-stick spray.
  2. In a bowl, stir together the almond flour, protein power, baking soda, salt, chocolate chips and peanut butter cups.
  3. In a standalone mixer or using a hand mixer, beat the melted sugar and butter for 2 minutes.
  4. Add in the eggs and vanilla extract until combined.
  5. Mix in the dry ingredients and stir just until the dough comes together.
  6. Press the dough into the skillet and bake for 18-20 minutes and a toothpick when inserted comes out clean.
  7. After 20 minutes, if your cookie isn’t cooked through, cover with tin foil and continue to cook for an additional 5-6 minutes.
  8. Cut into 12 slices and serve hot with ice cream if desired.
